Crave Bakery's Cameo Edwards appears on The View from the Bay television program in October 2006

Crave "Gluten & Milk-Free Autumn Pumpkin Muffins"
Makes 8 servings

2 eggs, room temperature
2 Tbsp. Soymilk
1/2 cup Cane Sugar
1/2 cup Brown Sugar
1/2 cup Butter or Shortening softened

1/3 cup Applesauce
2/3 cup Pumpkin

1 1/3 cups Brown Rice Flour
1 tsp. Cinnamon
1 tsp. Allspice
1 tsp. Baking Powder
1/2 tsp. Baking Soda
1/4 tsp. Salt

Optional- Add 1/2 cup of nuts (almond slivers, walnuts, chocolate chips, cranberries)

Preheat oven to 350.

Combine all dry ingredients in bowl and whisk.

Beat eggs and soymilk in separate mixing bowl thoroughly. When very fluffy add sugar, then shortening. Beat in pumpkin and applesauce.

Slowly add in dry ingredients until completely combined.

Spray muffin tins and spoon in batter. Bake approximately 30 minutes or until tester inserted comes out clean.
